Sandwich Sunday #5

There is a saying about law school… First year they scary you to death, second year they work you to death and third year they bore you to death… After my first week of my second year, the saying continues to be dead-on. The semester is going to be a busy one…
For this Sunday, I’m highlighting my tuna fish salad… Just mix tuna, a little mayo, a tablespoon of capers, a sprinkle of red crushed pepper, some garlic salt and a pinch of pepper. Spread it on some toasted bread with some crisp lettuce.

It is Sunday already??? Honestly, this week went so incredibly FAST! It seems like only yesterday, I was posting my first Sandwich Sunday Post! This week, I sorted through the Sandwich archives and came up with this one… Ginny and Juan’s Awesome Sandwich…

Now, I know that I frequently talk about Juan and sometimes I can probably get kinda gushy… but honestly this man is just so perfect for me…

This sandwich came about one morning during spring break… I woke up wanting alfalfa sprouts and avocado… telling this to Juan.. led to a grocery store trip… some laughter, silliness and a serious cheese discussion later… we came home with avocados… alfalfa sprouts… tomatoes… swiss cheese… fresh bread… yumminess!!!!

We toasted the bread and melted the cheese a bit… it was great! Exactly what I wanted The swiss cheese was a perfect sharp compliment to the avocado… Delicious!

As I look at my unposted food photograph archive, I was struck by the amount of sandwiches that I have made this year… As a student, it is a fast, delicious and easy dinner plus I can be creative based on what it is in the fridge… Every Sunday, I’ll post one of my creations. I would love for you to join in. Tonight I made a black bean burger with garlic and cilantro (from my window sill). I ate it with some sliced tomatoes and melted cheddar. It was delicious. The garlic and cilantro worked well with the creamy texture of the black beans. I would like to add this recipe to the Grow Your Own #23 since it uses cilantro that I grow in my apartment.

Ginny’s Black Bean Burger
(inspired by Kath)
1/3 cup black bean
1 garlic clove chopped
1/2 teaspoon fresh cilantro, chopped
sprinkle of crushed red pepper flakes
salt and pepper
1. Mash the black beans with a fork.
2. Mix in the rest of the ingredients and form into a patty.
3. Over medium heat, brown the patty about 2-3 minutes on each side.
4. Serve as desired.
