Happy Swiss National Day!!!

A very happy birthday to my friend, Dot!

I love celebrating Swiss National Day. This year my family is over there. It is a very strange feeling not being with them. However, I made some of my favorite Swiss rolls to celebrate!

Swiss Rolls
(adapted from here)

500 g flour
1 1/4 cup milk
1 packet yeast
2 tsp honey (or sugar)
60 g (about 4 tbl) butter
2 tsp salt
1 egg yolk

1. Warm 1/4 cup milk and had the honey to melt. Allow to cool to about 120F. Sprinkle with the yeast and stir.
2. Melt the butter in the rest of the milk. Allow to cool to about 120F (you do not want to kill the yeast).
3. Mix the yeast mixture with the flour. All to sit for about five minutes and sprinkle with salt.
4. Mix in the butter mixture and stir until incorporated.
5. Knead for about ten minutes or until it is smooth and elasticy. Add more flour as needed if it is sticky.
6. Cover with a towel and rise for 60-90 minutes, until doubled in size.
7. Split into eight rolls. Brush with the egg yolk mixed with a little milk.
8. Using scissors or a knife, cut a cross in the bread.
9. Allow to rise for 30 minutes.
10. Bake at 400F for about 20 minutes.
