Pita Pizzas with my Brother!

I’m home for the Easter weekend. I should be studying but, instead, I’ve been hanging out with my younger brother. We are going to watch Gladiator, while I “work” on my trial brief that is due on Monday morning.

My brother’s specialty is making pita pizzas.  Since he was 9 or 10, he has been making these pizzas for us, and has perfected the technique!

Pita Pizzas by Ginny’s Brother

3/4- 1 1/4 cup of Mozzarella, shredded (depending on how cheesy you want it)
1/4 cup of romano and/or provelone, shredded (again, depending on how cheesy you want it)
1 pita
1/4 cup of Don Peppino sauce
1-2 tablespoons olive oil

1. Heat oven to 450.
2. Place a pita, rub the olive oil on the pita so that the pita absorbs the oil. My brother recommends using a spoon to scratch the surface of the pita.
3. Spread the tomato sauce.
4. Sprinkle with 3/4 of the mozzarella cheese.
5. Sprinkle with the Romano and/or Provolone.
6. Sprinkle with the rest of the mozzarella cheese.
7. Bake for 9-13 minutes or until the cheese becomes melted.
