My Father’s Potato Salad

September 1st, 2010

4 potatoes, boiled, peeled and chopped
1 onion, chopped
4 celery stalks, chopped
2/3 cup mayo
1/3 cup mustard (the yellow stuff!)
pepper and salt to taste

Mix the Mayo and mustard to taste. Add Pepper and Salt. When you like the balance, mix it with the potatoes, onion and celery. This will ensure that the dressing is evenly covering the vegetables. Enjoy!
