Leftover Pumpkin? Make Gnocchi!

In Argentina, on the 29th of the month, the tradition is to make gnocchi, Los Ñoquis del 29. There are a few stories to explain the origins of this tradition but, regardless, it is a nice excuse to get together with friends and family.

Last month, when Juan’s mom told me about this tradition, I made Pumpkin Gnocchi. We served them with a brown butter-shallot-walnut sauce. The recipe could be easily adapted for any leftover pumpkin from Thanksgiving. Enjoy!

Ginny’s Pumpkin Gnocchi
2 cans pumpkin
1 teaspoon ginger
1 teaspoon allspice
1 teaspoon nutmeg
1 teaspoon salt
1 teaspoon pepper
enough flour to create a non-sticky dough (about 4 cups)

Mix all the ingredients together. Roll the gnocchi (add more flour if necessary) and boil until they rise to the top of pot.

Reminiscing… with Flemish Stew

Imagine being perched on a barstool… The bartender pours you a glass of Kriek… serves you a huge bowl of Flemish Beef Stew… you relax… enjoying the warm food… eager to recharge before going to explore Brussels some more…

Ok, I miss it! With exams coming, I’ve been thinking about my amazing trip. I made some Flemish stew in the slowcooker… I did have a similar dish when I was in Brussels.  Of course, they would have served it with french fries and I wanted mashed potatoes.  It was great and perfect for these cold November days.

So, I’ve been in a bit of a cooking slump and hence not much blogging… for some reason even though I have pretty good ideas, the execution just is not as tasty as I would like… probably has something to do with the impending doom exams… of course, when I received my order from the WEBstaurantStore, the leading restaurant equipment and supply website, I figured that perhaps my slump may be almost over…

When the WEBstaurantStore contacted me regarding a promotion (and giveaway for you!), I was a little unsure of it because the website is designed for restaurants and the food industry… but once my friend Aaron pointed out the copper mixing bowl, I realized I had underestimated this site.

It is a little difficult to browse because it is divided up by different types of food places but once I got the hang of it (the bakery category is an excellent place to start!), I started filling my cart with some basic cooking supplies that I desperately need…

You see- I started stocking my kitchen in college… combined with little income, many moves and numerous roommates… I have a hodgepodge of baking and cooking gear… It is time to have some grown-up cooking staples…

Through WEBstaurantStore I picked out 4 mixing bowls, 2 wooden spoons, 6 cutting boards, a spatula, cookie sheet and parchment paper… all for $50.  I was very impressed with how quickly my order arrived… three days later, I picked up the box!  It was like Christmas!
