Soup #2: Pumpkin Soup with Smoked Paprika

As part of my soup making craze, I wanted to make something with my new smoked hot paprika.  I settled on Pumpkin Soup with Smoked Paprika.  The only problem was that the HOT paprika was really, really, really HOT!  To calm it down a bit, I made some rice with my new rice maker, sprinkled it with some cheddar and added some avocado.  Um! Yum!  It was delicious!

Soup on the brain…

Last week I went on a soup making craze. I made four different types with great fall vegetables… sweet potato, pumpkin, butternut squash and, oh, tomato… then I froze them… I love coming home from a long day and being able to heat up some soup… this was my own creation… I wanted to try the Grains of Paradise… they were peppery and very good with butternut squash…

Butternut Squash and Grains of Paradise Soup
1 roasted butternut squash
1 onion, chopped
1 tps. olive oil
1 in ginger, sliced
1 cup apple cider
3 cups vegetable broth
1 tsp. grains of paradise, cracked
Salt and pepper

1. In a large pot, heat the olive oil over medium heat.
2. Saute the onions and ginger until soft.
3. Add the butternut squash, grains of paradise, apple cider and vegetable broth.
4. Bring to a simmer and simmer until the liquid reduces. Puree the soup. If it is too liquidy, continue to simmer until it is the consistency you want.

A Monday Cookbook Giveaway

It is Monday… the days are getting shorter… exams are getting closer… so I think we need a little bit of Chocolate and chocolate cake

For the next five weeks, I’m going to be giving away cookbooks from my collection.  Although I never thought I could part with my cookbooks, when it comes to moving in May, I will be happy I did this (I have way too many).  My first one will be Chocolate which has amazing photos and great recipes!

As for the chocolate cake, it was good but… as soon as it gets warm the consistency is too pudding like for my tastes.  Keep it cold and use high quality chocolate.
